In the center of town, specially around the cathedral you will find a considerable number of bars and pubs to have "tapas" (snacks) and drinks. Many of them anyhow are not open until really late, if that is what you are looking for.
The quarters of la Flora and las Llanas offer the right ambience specially for young people, who are crowding the bars and even the streets until 5 a.m.
If you feel you want to go on until 9 a.m., try las Bernardas and las Calzadas, where you will find somewhat more formal (and as well costly) locals and a more mature public.
